  1. Take 200 gms black sabut udad dal / black lentil
  2. Take 100 gms butter
  3. Get 50 gms ghee
  4. Take 3 tsp kashmiri chilli powder

  6. Prepare 2-3 tsp Garlic paste
  7. Get 2 tsp ginger paste
  8. Take 2 onion finely chopped(optional)

  10. Get 1/2 tsp garam masala
  11. Make ready 1/2 tsp kasuri methi
  12. Prepare As per taste Salt
  13. Take 50 gms thick cream
  14. Take As required Cooking cream

Instructions to make Dal Makhani:
  1. Wash and Soak udad daal overnight. Now again wash 2-3 times so dust can colour will change from black to slightly green.
  2. Now boil udad daal in a cooker on a very slow flame. (cover the lid and remove whistle). Cook it for 11/2 (one ane one half hour)add some garlic paste into it. (add more water while boiling)
  3. Now add salt. Now add some butter.
  4. For tempering Take a pan heat a 3-4 spoon ghee. Addd finely chopped onion and garlic ginger paste. Mix it well. Stir well. Cook until onion becomes brown.
  5. Now add finely chopped tomato(can use tomato puree) cook properly, then add Kashmiri chilli powder, also add red chilli powder (normal) according to your taste. Saute till the tomato puree is well cooked and add garam masala.
  6. Add this tempering into cooked dal (keep the gas on simmer)Stir properly. Now add thick cream and mix it.
  7. Now stir the dal and mash it, add more butter/ ghee. Cook until it combined.
  8. Add more butter/ ghee. Mashing the dal more and adding more butter will get you more creamier texture. Keep the gas on simmer. Add kasuri methi.
  9. Keep the gas on slow simmer. Cover the lid (remove the whistle)until it cooked perfectly (around 3 hrs). Keep stirring in between.
  10. Take one small bowl. Pour 1 tsp ghee and put it into a cooker. Now take one coal and heat until it became red. Now put hot coal into small bowl and cover the lid for 2-3 mints.
  11. This process will give you unique smoky flavour. This process is optional.
  12. Now you dal makhni is ready to serve. Garnish with cooking cream.
  13. During the entire process keep the gas on slow simmering.
