  15. Prepare 2 bundle string beans (sliced)
  16. Prepare 2 bunch Baby Bok Choy

Kare Kare (pronounced as kah-reh ka-reh) is a Filipino peanut-based stew. It's thick, rich, and probably one of the most luxurious and hearty Filipino dish you'll ever eat. In general, kare kare is a peanut based stew spiced with annatto powder (or achiote oil) to get it's marigold coloring and filled to the brim with various meats (like oxtail or beef) and vegetables (like eggplant, pechay, string beans, and more). It's one of the Philippines' most loved dishes, but it also comes with a confusing origin.

Steps to make Kare-Kare:
  1. In a pot add oil and sauté onion and garlic, once onions turn translucent remove then set it aside.
  2. Now using the same pot add beef ribs then brown all sides.
  3. Add the sauteed onion and garlic back to the pot. Then pour the beef stock and a cup of water into the pot then bring to a boil, cover and simmer for 1.5 hours or until meat is tender (Add water if needed).
  4. Turn of the heat then remove the beef ribs from the pot and leaving all the liquid, set beef ribs aside.
  5. Add sugar, ground toasted rice, peanut butter and water from soaked annatto seeds into the pot then mix thoroughly until it’s even in consistency. Turn on the heat to medium then let it boil.
  6. Once sauce is boiling, turn heat to low then add the beef ribs and simmer for 15 minutes. Season with a dash of salt and freshly ground pepper.
  7. Now cook the vegetables separately by blanching string beans, eggplants and bok choy.
  8. Pour stew on a deep bowl and add cooked vegetables on the side. Serve with bagoong.

The Kare-Kare recipe is a stew which is known for having a thick peanut sauce. Kare-Kare is not a so simple dish. Its main ingredient is the Oxtail. The Filipino Bokchoy, Banana Blossom, Eggplant and String beans are a must in this recipe. Kare-kare is a Filipino dish originated from the culinary capital of the Philippines, Pampanga.
