5. Add in 3 cups coconut.
6. Cover and refrigerate for at least one hour.
7. Shape into 1" balls. The dough is sticky, so hand rolling isn't easy. A cookie dough scoop works better.
8. Roll balls into 1 cup coconut.
9. Place on ungreased cookie sheet and flatten slightly.
10. Bake at 350?F for 10-15 minutes.
