Heat a large enameled cast-iron pot over medium-high heat, and add the oil. Mix the chili powder, cumin and coriander together in a bowl. Heat the oil in a large Dutch oven or pot over medium-high heat. Transfer to a plate; reserve the pot.

Instructions to make Chicken Paella:
  1. Take a large pan and put 2 tablespoon olive oil and shallow fry the chicken on high heat till the chicken is caremalised on high heat for 15 minutes
  2. Add the vegetables and fry with the chicken till the vegetables are mildly soft
  3. Add smashed and finely chopped garlic,tomato pure,smoked paprika,salt and pepper and fry for another 2 to 3 mins
  4. Add the chicken stock and a bit of saffron and mix all the elements together
  5. Add the rice in the stock and cook on low heat for 20 mins or till the rice and chicken is cooked and all the stock is evaporated
  6. Garnish with red,yellow and green bell peppers,green chillies,coriander and spring onion and serve hot

Chunks of chicken and chorizo slices are cooked with a colorful blend of veggies until just done, then blended with white rice and broth for a quick and tasty weeknight dinner. Add the chicken broth to the rice. Stir in the spices, then tip in the rice. Finely chop the parsley stalks, then roughly chop the chorizo and chicken thighs.
